The day’s production, suggested on eight weeks of sales.
Per sector, per day of the week, with trade orders and orders to prepare added in. Ingredient needs follow from it, recipe cards give the cost price, lots stay traced right through to the sale.
Per sector
Bakehouse, lab, kitchen, shop: each sector sees its own production for the day, and nothing else.
Grids per day of the week
Saturday is not Tuesday. One grid per day, which the suggestion fills in.
Suggestion on 8 weeks
Calculated on eight weeks of sales per product, plus the day’s trade orders and orders to prepare.
Ingredient needs
Derived from the day’s recipes, with a draft purchase order in one click.
The cost price, sub-recipe by sub-recipe.
A recipe card adds up its sub-recipes and its ingredients at the last cost price. It gives the cost price, the margin and the list of allergens for the chosen jurisdiction: Health Canada, the European Union or the FDA.
- Cost prices come from supplier invoices imported as PDF, photo or CSV, on the inventory side.
- Allergens flow up from the sub-recipes to the finished product, without anyone copying them over.
- Cost and margin masked for anyone without the “see figures” capability. The recipe stays readable, the amounts are absent.
Sub-recipes
A dough, a lamination butter, a cream: reused across several products.
Cost price and margin
At the last cost price of each ingredient, against the selling price.
Allergens
Per Health Canada, the European Union or the FDA, chosen at the company level.
The day’s needs
Planned production, multiplied by the recipes, gives the list of ingredients to take out.
Every lot, from receipt to the cascading recall.
A lot received is followed into the sub-recipes and finished products it went into. A recall cascades and names what is affected. HACCP readings are taken at the station, under the rule that applies where you are.
- HACCP: temperatures, cleaning, receiving, cooling, per MAPAQ, the FDA or the French rule.
- Losses and surplus declared per sector, with a reason, for the loss report.
- Unsold-goods donations: recipients, one PDF slip per donation, a yearly total.
One tablet per sector, one PIN per person.
The station tablet shows no prices and no session to open. Everyone signs what they do with their PIN.
The bake
The sector sees its production for the day, bakes, then validates the bake by signing with a PIN.
The evening loss
Open to any member of the sector, signed with a PIN. Correcting a quantity from the console requires the “adjust stock” capability.
Kitchen displays
Each item ordered goes to its station, from the bar to the bakehouse. The logbook passes instructions from one team to the next.
Orders come in, production follows.
Trade orders
Standing orders from cafés, hotels and grocers go into the day’s production.

Cakes and Yule logs ordered on the online page, with their daily cap, are to be prepared on their date.

What is the production suggestion based on?
Eight weeks of sales, by day of the week and by product, plus the day’s trade orders and orders to prepare. The suggestion does not read per-product sales from an external point of sale such as Clover: it starts from sales rung through the Yoseri point of sale.
How is the cost price calculated?
Each recipe card adds up its sub-recipes and its ingredients at the last known cost price, taken from imported supplier invoices. It gives the cost, the margin and the allergens. Margin and costs are masked for anyone without the “see figures” capability.
What does lot traceability do in a recall?
Each lot received is followed to the products it went into. If an ingredient is recalled, the recall cascades: the sub-recipes, the finished products and the lots concerned come up, at every step.
What about labels and recipe import?
Printable regulatory labels are not done. CSV import of recipes is not available yet: recipes are created in the console, sub-recipe by sub-recipe. We would rather say so before you sign.

Recipe cards, sectors, station tablet. Thirty days of trial, no card. The demo bakery already has its recipes and its bakes.
